FRIED GOLDEN WONTON
INGREDIENTS:
  WORLDFOODS Thai Sweet Chilli with Kaffir Lime Dipping Sauce; 120g minced pork; 120g minced shrimp; 2 wood ears, soaked and chopped; 1 tbsp chopped coriander; 1 tsp chopped garlic; 2 tbsp chopped spring onion; 1 egg; 1 tbsp light soy sauce; Pinch of granulated sugar; Ground black pepper; 20 wonton wrappers; Oil for deep frying.
INSTRUCTIONS:
1. Combine the pork, shrimp, wood ears, coriander, garlic, spring onions and egg in a bowl. Mix well and season with soy sauce, sugar and pepper.
2. Take a wonton wrapper and place it on a flat surface. Put a heaped teaspoonful of filling in the centre of the wrapper, then pull up the edges of the pastry around the filling.
3. Pinch together to seal. Repeat with the remaining pork mixture.
4. Heat the oil in a wok. Fry the wontons in batches until they are crisp and golden brown. Drain on kitchen paper towel and serve immediately with WORLDFOODS Thai Sweet Chilli with Kaffir Lime Dipping Sauce.
