STEAMED MIXED SEAFOOD CAKE
INGREDIENTS:
 

2 tbsp / 40g WORLDSFOODS Thai Green Curry Paste; 1 pc Small Young Coconut , cut the top off to open; 200g Fillet Fish, cut into small pieces; 2 tbsp White Greens, boiled and cut into bite-size pieces; 1 tbsp Kaffir Lime Leaves, finely chopped; 1 tbsp Sweet Basil Leaves; 2 tbsp Coconut Milk; 1 tbsp Fish sauce.
Garnishing: 1 pc Fresh Chilli, cut into long strip, 1 tsp Coconut Milk, boiled with 1 tsp rice flour.

INSTRUCTIONS:
1. In the coconut, place with white greens and sweet basil leaves at the bottom.
2. Using food processor, mix the fish, WORLDSFOODS Thai Green Curry Paste, Kaffir Lime Leaves, Sweet Basil Leaves, Coconut milk and Fish Sauce until thoroughly blended. Gradually add coconut milk to the mixture. This becomes the fish filling. Let it stand for 10 – 20 minutes.
3. Fill the coconut with the fish filling. Steam for 15 - 20 minutes.
4. Top with red fresh chilli and boiled coconut milk. Return to steamer for another minute and serve.
